Preheat oven to 350ºF. In an 8x8x2 pan,
put 4 oz. sauce, 1 layer of uncooked
noodles, 4 oz. sauce, 4 oz. mozzarella, 5 oz.
ricotta and 1/3 of the meat. Repeat
layering again starting with the noodles. For the last layer, start
with the
noodles, then ricotta, meat, sauce, mozzarella, and finish with the
parmesan
or romano. Cover pan with plastic wrap
and then foil. Bake 90 minutes, uncover and let rest 10 minutes before
serving.
