Preheat oven to 350ºF. Rub roast with mustard
on all sides except bottom. Rub garlic on all sides into the mustard.
Sprinkle the top and sides with the herbs. Put into a shallow roasting
pan, and roast for 90 minutes in center of oven, or until internal
temperature of roast is 158ºF. Remove from oven and let rest for 15
minutes before slicing.
Serve with fried potatoes and corn off the
cob. |
